brownie mix

75g makes one huge brownie

Use any size tin, the batter should end up around an inch thick


  1. Preheat the oven to 200°C (180°C fan) and line a baking tin with baking paper.
  2. Add g of freshly boiled water to a large bowl with either g of melted dairy-free margarine or sunflower oil (margarine is definitely our favourite!).
  3. Empty the mix into the bowl with the water and the margarine. Stir to form a thick sticky dough and transfer to the tin.
  4. Use the back of a spoon to spread the batter into an even layer in the tin.
  5. Bake for 25 minutes and let the brownies cool before cutting.
  6. Voila! Your simple vegan brownies
50g makes one huge cookie


  1. Preheat the oven to 200°C (180°C fan) and line a baking tray with baking paper.
  2. Add g of cold water to a large bowl with g of dairy-free margarine. Mix together.
  3. Empty the mix into the bowl with the water and the margarine. Stir to form a thick dough, you might want to get your hands involved!
  4. Divide the mix into even chunks and roll each chunk into a round ball.
  5. Place on the baking tray, leaving 3 inches between each ball.
  6. Bake for 15-20 minutes depending on how gooey you like them. 15 minutes is perfect for us!
  7. Allow to cool before digging in to your easy vegan cookies!

sponge mix

25g makes one cupcake

500g makes one large cake


  1. Preheat the oven to 200°C (180°C fan) and line a baking tray with baking paper.
  2. Add g of plant-based milk into a large bowl with g of melted dairy-free margarine. Mix together.
  3. Empty the mix into the bowl with the milk and the margarine. Whisk by hand to form a batter!
  4. Divide the mix into cupcakes (or use 500g for a 1 large cake)
  5. Bake the cupcakes for 15-20 minutes or 30-40 if you're making 1 large cake (note that cooking time will vary on the size of your tin so keep an eye on it!)
  6. Allow to cool before digging in to your easy vegan vanilla cakes!
