Melt in the Middle Brownie Desserts

Ingredients

Ganache:

40g chocolate - chopped into chunks (or use chocolate chips)

40g hot soya milk

450g brownie mix

30g melted margarine

90g boiling water

Instructions

To make the ganache, transfer the chocolate to a large bowl and pour over the hot soya milk

Leave for 5 minutes to allow the chocolate to melt

Stir to form a thick chocolate sauce. If solid chocolate chunks remain in the sauce, heat gently on the stove or in the microwave until completely smooth

Refrigerate for 30 minutes, or until solid

Preheat the oven to 200'C/ 180"C fan

In a large bowl, combine the brownie mix, melted margarine and boiling water

Line 4 ramekins with oil, margarine or baking paper

Use half of the brownie mix to fill the base of each ramekin

Add 1 tbsp solid ganache to the centre of each ramekin

Cover with the rest of the brownie mix

Bake for 20-25 minutes and serve hot!

These can also be kept covered in the fridge overnight or until you're ready to bake them - perfect for dinner parties!
